  16. {Take to taste of Chilli.
  17. {Take 2 teaspoons of salt.
  18. {Prepare to taste of Fresh parsley, very finely chopped.
  19. {Get 1 of lettuce washed and patted dry for serving.

Classic Turkish-style steak tartar, better known as çiğ köfte (CHEE' kuf-TAY'), is made with very high quality, fat-free beef that is minced and kneaded together with fine bulgur, pepper, tomato paste, onion, garlic, and a mixture of Turkish spices. It's a regional dish from the southeastern part of Turkey with a lot of history behind it. The vegan kofteh they serve here is known in Turkey as çiğ köfte. Traditionally made with raw beef, across Turkey the dish was replaced with cracked bulgur as a main ingredient due to public health concerns.
